Saisons come in a variety of shapes and sizes, reflecting an agricultural origin whereby farmers would have the workers brew beer during the quieter winter months using barley, wheat, rye – whatever happened to be available. In modern times, the defining characteristics include a fruity flavour with spicy notes, high carbonation and an exceptionally dry finish.

Our Table Saison (4.0%) is a light version of the style, both in terms of alcohol content and colour; pale straw topped with a brilliant white head. As with all our beers, the flavour is anything but restrained and here we have a big fruity hit accompanied by more delicate floral notes and the trademark peppery spice.

On the nose the fruit is orange, with the first sip revealing blackcurrant too. There are strong citrus notes throughout with lime and tangy marmalade to the fore over an earthy, bready base. The yeast profile is at the cleaner end of the Saison scale, but the classic fruit-spice character is in full effect. There’s a lively mouthfeel, medium body and a crisp, dry finish.

What The Hell Was I Thinking?

We’ve been in a real Belgian groove recently! This is our second Saison in the last few months and follows the Dubbel, Christmas Ale and an Imperial Stout that had its fair share of Belgian influence too.

We wanted this Saison to be more than just a lighter version of our previous interpretation of the style. Where BIS11 was built to showcase one of our favorite yeast strains, this one is all about the hops. The fruit – floral – spice cocktail from First Gold, Celeia and Tettnang varieties is a perfect match for the cleaner French Saison yeast, accentuating these trademark characteristics and generally amplifying this otherwise light and spritzy beer. It’s called a Table Saison to indicate the lower ABV, but a ‘beer for the table’ is what we had in mind here; something to accompany a meal. Not too heavy and overpowering but with enough punch and complexity to stand up to a range of food pairings. Saison are the kings of beer-food matching and this one’s an ideal partner for picnics, barbecues, spicy Mexican, herby Mediterranean; the possibilities are endless!

This is a beer to celebrate the change of the seasons from winter to spring; as days are warmer and evenings are lighter we’re out and about more and seeing signs of life everywhere. As any Belgian farmhand will tell you, light, fruity beers with a degree of complexity are perfect for days like these.
