Smeirlap! Shoogle is our homage to one of our favourite extra hoppy Belgian pales. Dry, fruity and devilishly bitter, Shoogle showcases how satisfyingly refreshing such a beer can be. Brasserie de la Senne’s much revered Taras Boulba is the inspiration behind the recipe and we will be brewing a new version of Shoogle every year. The idea is to brew a base beer akin to Taras and follow similar processes, but change up the hops each time. The beer is bittered with the previous day’s Southside Pale finishing hops, making use of all that bittering potential that would otherwise go to waste. For Version 1 an extra pale pilsner malt base is met with lashings of Harlequin, Olicana, Perle, Saphir and Blanc hops, all creating a delightful array of fruity, grassy and herbal aromatics and flavours. An extra long cold conditioning period, coupled with the use of a farmhouse Belgian yeast strain, makes for an expressive, crisp and long lasting experience.
