Holy Goat: Spectral Lore 2025 Sour (375ml)

Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 250g/l Scottish Tayberries harvested within 12 miles of the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred. Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture. Whilst a framboise style is traditionally brewed with raspberries, we decided to use our local tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma.
