Right, so we know that Citra and Simcoe is pretty much the GOAT of hop combinations – it’s a combination we’ve been using since the early days of Loka Polly right the way up to modern day Polly’s Brew Co, and its reliability for producing such fruit-forward flavour is why we keep coming back to it time and time again year after year. How do you accentuate perfection though and take it to the next level? Take it to the South Pacific, baby! Eclipse is a relatively new hop to us here at Polly’s, but we’re making up for lost time by utilising a shedload in Supreme Dream to bring a standard pale ale up to DDH levels. The result? An intense flavour experience that echoes the mouthfeel and flavour profile of one of our IPAs but at a much more reasonable ABV. Fruit forward notes of sweet mandarin, kiwi, passionfruit, peach and apricot play off spiky pine needles and citrus zest in this slammer of a pale.
