Framboise inspired wild ale with tayberries and strawberries

Inspired by the Belgian framboise, our version is primary fermented with a Brettanomyces blend which produces intense juicy stone and tropical fruit flavours. In this, our 2023 iteration of Spectral Lore, we refermented the base beer on 250g/l of Tayberries and an additional 80g/l of strawberries, both harvested around 12 miles from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee where these berries were first bred
