This beer displays an alternative expression of the plums used to make May Hill. True to type but more nuanced.
The primary jammy pluminess takes a backseat to the soft tannins of the skins and the sweet amaretto character from the stones. A zingy sherbet aroma whispers softly over the top.

After you package a fruit beer there is always going to be fruity goodness left in the tank. After we have packaged our plum beer May Hill there will be the stones as well as the skin and some of the fruit flesh remaining. Although lots of flavours will have been taken into May Hill there are other flavours left behind. Filling the tank with a second beer (leaving the fruit remnants in the tank) allows us to capture a different essence and dimension from the fruit.

Blaisdon plums (which are the specific local variety that go into May Hill) have a thick skin and a big stone relative to the flesh content. This makes them excellent for macerating in beer. The stones provide a lot of almondy, marzipan-like flavours, reminiscent of Amaretto liqueurs. This sweet slightly nutty aroma forms an amazing counterpoint to the dry sherbet character conferred by the skins of the Plums.
